Ingredients:
- 8 chicken thighs - 2 onions
- Curry powder to taste
- Salt to taste
- Saffron to taste
- 3-4 cups basmati rice
- A bunch of dill
- Shelled fava beans
- Oil for frying
Instructions:
1. Soak the fava beans in water for about an hour.2. Peel and chop the onions.
3. Heat oil in a large frying pan and add the onions. Sauté until they are soft.
4. Add the chicken thighs and cook until they are golden brown.
5. Season the chicken with curry powder, salt, and saffron. Mix well.
6. Add the fava beans and rice to the pan. Pour in enough water to cover the rice.
7. Bring the mixture to a boil, reduce the heat, and cover with a lid. Let it simmer for about 20-25 minutes until the rice is cooked.
8. Finally, add the chopped dill and stir gently. Serve warm.
