These moist muffins are the perfect snack, combining the flavors of spinach and feta cheese.
Ingredients:
- 2 cups fresh spinach
- 5.3 oz feta cheese
- 1 cup all-purpose flour
- 1/2 cup milk
- 1/2 cup oil
- 2 eggs
- 1 tbsp baking powder
- 1 tsp salt
- 1/2 tsp black pepper
Instructions:
1. Preheat the oven to 400°F (200°C). Grease a muffin tin or use paper muffin liners.
2. Rinse and chop the spinach. Crumble the feta cheese into small pieces.
3. In a bowl, mix together the flour, baking powder, salt, and black pepper.
4. In another bowl, whisk together the milk, oil, and eggs. Add the chopped spinach and feta cheese to this mixture.
5. Gently combine the dry ingredients with the wet ingredients. Mix until just combined.
6. Divide the batter into the muffin cups and bake in the oven for about 15-20 minutes, or until the muffins are golden brown and cooked through.
7. Allow to cool slightly before serving.
