A delicious chicken stir-fry that's quick and easy to prepare, perfect for a weekday dinner. Marinated chicken strips combine with colorful vegetables and cashew nuts to create a tasty meal. Preparation Time: Approximately 30 minutes
Serving Size: 4 servings
Ingredients:
- 400-450 g honey-marinated chicken breast strips
- 1 onion, chopped
- 1 bell pepper, sliced
- 1 cup frozen stir-fry vegetables
- 1 pouch chow mein sauce
- 1 cup roasted cashew nuts
- 1 tsp fresh ginger, grated
- Noodles (to taste)
- Olive oil for frying
Instructions:
1. Heat olive oil in a pan over medium heat.
2. Add the chicken strips and cook until they are golden brown.
3. Add the chopped onion and sliced bell pepper to the pan. Sauté until the vegetables soften.
4. Stir in the frozen stir-fry vegetables and mix well.
5. Pour in the chow mein sauce and add the grated fresh ginger. Stir all ingredients together and cook for a few more minutes.
6. Cook the noodles according to package instructions and serve the stir-fry over the noodles. Sprinkle roasted cashew nuts on top before serving.
