Ingredients:

- 2 carrots
- 1 zucchini
- 1 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme

Instructions:

1. Preheat the oven to 200°C (400°F).
2. Peel and chop the carrots, zucchini, red onion, and bell peppers into bite-sized pieces.
3. Place the vegetables in a large bowl and add the olive oil, salt, black pepper, rosemary, and thyme.
4. Mix the vegetables well to ensure the spices coat them evenly.
5. Spread the seasoned vegetables on a baking sheet lined with parchment paper.
6. Roast the vegetables in the oven for about 25-30 minutes, until they are tender and have a nice color. Stir once during cooking.
7. Remove from the oven and serve warm.
