Ingredients:
- 400 g pasta (e.g., spaghetti)
- 150 g bacon or pancetta
- 3 egg yolks
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain the pasta, reserving a bit of the cooking water.
2. Chop the bacon or pancetta into small pieces and fry them in a pan over medium heat until crispy. Add the minced garlic to the pan and sauté for another minute.
3. In a bowl, mix the egg yolks and grated Parmesan cheese. Add a little of the reserved pasta water to create a creamy mixture.
4. Combine the drained pasta with the bacon and garlic in the pan. Mix well.
5. Remove the pan from the heat and quickly add the egg mixture to the pasta, stirring rapidly to prevent the eggs from scrambling.
6. Season with salt and black pepper to taste. Serve immediately and garnish with fresh parsley.
