Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- 1 tsp oregano
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and set aside.
2. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, sauté for about 3-4 minutes until softened.
3. Add the bell pepper and zucchini to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
4. Stir in the cherry tomatoes, spinach, and oregano. Cook for an additional 2-3 minutes until the spinach wilts.
5. Mix the cooked pasta into the vegetable mixture. Season with salt and pepper.
6. Serve immediately, topped with grated Parmesan cheese if desired.
