A juicy turkey pie that combines sweet corn, fresh basil, and sautéed onions. A great way to utilize leftover turkey.

Serving Size: 6-8 people

Ingredients:

- 7-8 cups cooked turkey
- 4 onions
- 6 sprigs fresh basil
- 3 cups cooked corn (canned or frozen corn works)
- 200 g grated cheese
- 2 eggs
- 4 cups turkey broth (or chicken broth)
- 1-2 tsp salt
- Oil for sautéing
- Pie crust

Instructions:

1. Prepare the pie crust according to the recipe.
2. Rinse the basil and allow it to dry.
3. Peel and thinly slice the onions. Sauté the onions in oil in a skillet until golden.
4. Remove the turkey from the bones and cut it into bite-sized pieces. Add the turkey to the skillet with the onions and sauté for a moment.
5. Remove the skillet from heat and let it cool.
6. Pour the pie crust into a round pie dish, covering the bottom and sides.
7. Tear the basil leaves from the stems and chop them finely.
8. Crack the eggs into a bowl and whisk lightly. Grate the cheese finely.
9. In a large bowl, combine the turkey, corn, grated cheese, basil, and eggs. Mix well.
10. Pour the filling into the pie crust and bake in a preheated oven at 200°C (400°F) for about 45-55 minutes, until the filling is set and the edges are beautifully golden brown.
11. Remove the pie from the oven and let it cool for about 15 minutes.
12. Heat the turkey broth and season it if needed with salt and pepper. Pour the broth evenly over the pie.
13. Allow the pie to cool completely in the dish before serving. Cover and store in the refrigerator.
Serve cold with a refreshing salad.
