Ingredients:
- 200 g quinoa
- 1 cucumber
- 1 red bell pepper
- 1 yellow bell pepper
- 200 g cherry tomatoes
- 100 g feta cheese
- 1 avocado
- 1 dl fresh basil
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Cook the quinoa according to package instructions and let it cool.
2. Rinse and chop the cucumber, bell peppers, and cherry tomatoes.
3. Peel and slice the avocado.
4. Crumble the feta cheese.
5. Combine all ingredients in a large bowl.
6. Prepare the dressing by mixing olive oil, balsamic vinegar, salt, and pepper. Pour the dressing over the salad and gently toss.
7. Serve immediately or let it marinate in the refrigerator for a while before serving.
