A delicious traditional dish from the Ylitornio region, combining tender reindeer (or moose) meat with flavorful root vegetables. This dish is a perfect treat for a winter evening. Preparation Time: 2 hours
Serving Size: 4-6
Ingredients:
- Butter for frying
- 1 dl all-purpose flour
- Approximately 2 tsp salt
- 1 kg reindeer roast (or moose roast)
- 10 juniper berries (crushed or whole)
- 1 tbsp mustard
- 2 carrots
- 2 dl cream
- 5 dl water
- 1 small turnip
- 10 allspice berries (crushed or whole)
- 2 onions
Instructions:
1. Rinse and dry the roast. Remove any membranes from the meat.
2. Brown the roast in butter in a skillet until it gets a nice color.
3. Sprinkle the roast with flour and salt, mixing well.
4. Add crushed juniper berries and mustard, and stir to combine.
5. Peel and slice the carrots, turnip, and onions. Add them to the roast.
6. Pour cream and water over the roast. Add the allspice berries.
7. Let the dish simmer on low heat with a lid for about 1.5 hours, until the meat is tender.
8. Serve warm, preferably with potatoes or rye bread.
