A delicious and filling Italian dish that comes together quickly and easily. Perfect for a weeknight dinner.

Ingredients:

- 400 g pasta (e.g., spaghetti)
- 150 g bacon or guanciale (Italian bacon)
- 3 egg yolks
- 1 whole egg
- 100 g Parmesan cheese (grated)
- 2 cloves garlic (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish, optional)

Instructions:

1. Cook the pasta in salted water according to package instructions until al dente.
2. Cut the bacon into small cubes and fry in a pan over medium heat until crispy.
3. Add the minced garlic to the bacon and cook for another minute.
4. In a bowl, whisk together the egg yolks, whole egg, and grated Parmesan cheese. Add a pinch of salt and plenty of black pepper.
5. Once the pasta is cooked, drain it and reserve some of the cooking water.
6. Add the hot pasta to the pan with the bacon and garlic. Mix well.
7. Remove the pan from heat and quickly add the egg mixture to the pasta, stirring rapidly to prevent the eggs from scrambling.
8. If the mixture is too thick, add a little reserved pasta water until you reach the desired consistency.
9. Serve immediately, garnished with fresh parsley if desired.
