Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or fusilli) - 2 chicken breast fillets
- 2 tbsp olive oil
- 100 ml pesto
- 100 g cherry tomatoes
- 50 g grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain and reserve a little cooking water. 2. Heat olive oil in a frying pan over medium heat. Season the chicken breast fillets with salt and pepper, and cook in the pan for about 5-7 minutes on each side, or until the chicken is cooked through.
3. Remove the chicken from the pan and let it rest for a moment before slicing.
4. Add the cooked pasta to the pan, then add the pesto and mix well. If the pasta seems dry, add a little reserved cooking water.
5. Add the sliced chicken and halved cherry tomatoes to the pasta. Gently mix to combine.
6. Serve the pasta topped with grated Parmesan cheese and fresh basil.
