A delicious flatbread topped with spiced lamb and yogurt, perfect for a unique meal. Preparation Time: 1 hour
Serving Size: 4 servings
Ingredients:
- 300 g Turkish yogurt - 2 eggs
- 0.5 tsp salt
- 600 g durum wheat flour (plus extra for dusting)
- 400 g ground lamb
- 200 ml dark roasted brewed coffee
- 1 onion
- 2 garlic cloves
- Oil for frying
- Baharat spice mix (see recipe below)
- Fresh coriander
- Fresh mint
- Green chili
- Olive oil
Baharat Spice Mix:
- 1 tbsp cumin seeds - 1 tbsp coriander seeds
- 1 tsp cinnamon
- 1 tsp smoked paprika
- 0.5 tsp cayenne pepper
- 1 tsp salt
- 0.5 tsp cardamom
- A pinch of black pepper
- A pinch of nutmeg
Instructions:
1. Prepare the Baharat Spice Mix: Grind the cumin and coriander seeds in a mortar. Add the other spices and mix well. 2. Make the Flatbread Dough: In a bowl, combine the yogurt, eggs, salt, and flour. Form the dough into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
3. Pre-bake the Flatbread: Roll out the dough on a floured surface into thin rounds. Preheat the oven to 220°C (428°F) and bake the flatbread rounds on the top rack for 5 minutes.
4. Prepare the Kahvilammas: Sauté the chopped onion and garlic in oil in a pan. Add the Baharat spice mix and sauté for a few minutes. Add the ground lamb and cook until browned. Stir in the brewed coffee and let simmer for about 15-20 minutes.
5. Assemble the Flatbread: Remove the pre-baked flatbreads from the oven. Layer on the kahvilammas, Turkish yogurt, and optionally a poached egg.
6. Finish Baking: Return the flatbreads to the oven for another 5 minutes, then switch to the broiler for 2 minutes to achieve a nice golden color.
7. Garnish and Serve: Top with fresh coriander, mint, sliced green chili, and a drizzle of olive oil. Serve immediately!
