A delicious combination of Middle Eastern spice blend Dukkah served with quick and easy flatbreads. Preparation Time: 30 minutes
Serving Size: 2-4 flatbreads
Ingredients for Dukkah:
- 25 g pistachios - 25 g walnuts
- 2 tbsp sesame seeds
- 2 tsp coriander seeds
- 2 tsp cumin seeds
- 1 tsp black peppercorns
- Salt to taste
- 1/2 tsp smoked paprika
- Pinch of dried thyme and mint
Ingredients for Flatbreads:
- 125 g all-purpose flour - 50 g water
- 2 tbsp olive oil
- A pinch of salt
Instructions:
1. Dukkah: Toast the pistachios and walnuts in a dry pan until fragrant and slightly browned. Set aside. 2. Toast the sesame seeds in the same pan until golden. Set aside.
3. Finally, toast the coriander seeds, cumin seeds, and black peppercorns until aromatic.
4. Grind the toasted ingredients in a mortar and pestle or with a kitchen tool until coarse. Mix in the smoked paprika and herbs. Add salt to taste and store in an airtight container.
5. Flatbreads: In a bowl, mix the flour, olive oil, and salt. Add the water and knead the dough until smooth. Let rest for 10-15 minutes.
6. Divide the dough into 2-4 pieces and flatten or roll into thin circles.
7. Cook the flatbreads over high heat in a skillet or on a grill until cooked through. Optionally brush with olive oil.
8. Serve the flatbreads immediately with the Dukkah spice blend and other dips.
