A delicious alternative to cloudberry jam, made with carrots and gooseberries, sweetened with low-carb sugar. Vibrant and tasty, it’s a great addition to your pantry.
Preparation Time: 30 minutes
Serving Size: Approximately 500 ml

Ingredients:

- 2 dl grated carrots
- 2 dl gooseberries (fresh or frozen)
- 1 dl low-carb sugar
- 1 tsp xanthan gum
- 1 tbsp lemon juice
- 1 dl water

Instructions:

1. Peel and finely grate the carrots.
2. In a saucepan, combine grated carrots, gooseberries, low-carb sugar, lemon juice, and water.
3. Heat the mixture over medium heat until it begins to boil.
4. Reduce the heat and let it simmer for about 15-20 minutes, until the mixture thickens.
5. Stir in the xanthan gum and cook for another 2-3 minutes.
6. Pour the jam into clean, hot jars and seal the lids immediately.
7. Allow to cool at room temperature before transferring to the refrigerator.
