A delicious and simple apple pie perfect for coffee breaks or dessert. Preparation Time: 45 minutes
Serving Size: 8 servings
Ingredients:
- 1 tsp cinnamon
- 2 tbsp beaten eggs
- ½ dl soy flour
- 1 dl sweetener
- Pre-cooked and spiced apple slices
- 250 g cottage cheese (low-fat)
- 1 tsp baking powder
- 100 g crushed almond flakes
- 150 g room temperature butter
- 2 tsp sweetener (cinnamon flavor)
- 1 egg
Instructions:
1. Peel and slice the apples. Simmer them briefly in a small amount of water until they soften.
2. In a bowl, mix the room temperature butter with the sweetener. Add the beaten egg and stir until smooth.
3. Incorporate the cottage cheese, baking powder, soy flour, cinnamon, and almond flakes into the mixture, and mix well.
4. Pour the batter into a greased pie dish.
5. Spread the simmered apples on top of the batter.
6. Bake at 175 degrees Celsius for about 30 minutes, until the pie is beautifully golden brown.
7. Allow to cool slightly before serving.
