A delicious cloudberry jam that combines the sweetness of carrots and red currants, creating a unique and flavorful spread. Perfect for pastries, yogurts, or toast.Preparation Time: 1 hour 10 minutes
Serving Size: About 5-6 jars
Ingredients:
- 1½ kg carrots
- 3 l red currants
- 1½ kg jam sugar
Instructions:
1. Peel and grate the carrots.
2. Rinse the red currants.
3. Place the carrots and red currants in a pot and add just a splash of water.
4. Cook the mixture for about 1 hour, until the ingredients are soft and easily mashable.
5. Stir the jam sugar into the mixture and cook for an additional 10 minutes.
6. Pour the hot jam into clean jars and seal tightly.
