Ingredients:
- 300 g pasta (e.g., penne or spaghetti)
- 200 g fresh spinach
- 100 ml cream
- 1 onion
- 2 garlic cloves
- 50 g Parmesan cheese (grated)
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a little cooking water.
2. Peel and finely chop the onion and garlic.
3. Heat the olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until soft.
4. Add the fresh spinach to the skillet and cook until wilted.
5. Pour in the cream, mix well, and let the sauce simmer on low heat for a few minutes.
6. Add the cooked pasta to the skillet and stir to combine. If needed, add a bit of reserved cooking water to help coat the pasta evenly.
7. Stir in the grated Parmesan cheese and season with salt and black pepper. Mix well.
8. Serve warm, garnished with fresh basil if desired.
