Serving Size: 8-10 servings
Ingredients:
- 1 cup eggs
- 1 cup sugar
- 1/2 cup potato flour
- 1/2 cup wheat flour
- 1 tsp baking powder
- Jam (of your choice)
- Whipped cream (optional)
Instructions:
1. Beat the eggs and sugar until fluffy.
2. Gently fold in the potato flour, wheat flour, and baking powder into the egg mixture.
3. Pour the batter onto a baking tray lined with parchment paper.
4. Bake at 200°C (392°F) for about 7-10 minutes until golden brown.
5. Immediately turn the baked cake onto a sugar-dusted parchment paper after about 50 seconds of removing it from the oven.
6. Spread the jam evenly over the cake, leaving about 2 cm of edges without filling.
7. If using, spread whipped cream on top of the jam and start rolling from the jam side.
8. Roll the cake tightly and refrigerate for about 45 minutes to set.
9. Serve sliced.
