Ingredients

- 2 large eggs
- 2 dl sugar
- 2 dl all-purpose flour
- ½ dl cocoa powder
- 1½ tsp baking powder
- 1 tsp vanilla sugar
- 3 dl grated carrots
- 1 dl oil
- 1 tsp cinnamon (optional)

Instructions

1. Preheat the oven to 175°C (350°F). Grease and flour a baking sheet.
2. In a bowl, beat the eggs and sugar together until light and fluffy.
3. In another bowl, mix the flour, cocoa powder, baking powder, vanilla sugar, and cinnamon.
4. Gradually add the dry ingredients to the egg mixture, alternating with the oil, and mix until smooth.
5. Fold in the grated carrots until well combined.
6. Pour the batter onto the prepared baking sheet and spread it evenly.
7. Bake in the oven for about 25-30 minutes, or until the cake is cooked through.
8. Allow to cool slightly, then turn the cake onto a piece of parchment paper and roll it up carefully.
9. Let it cool completely before filling.
