A delicious, rustic rolled cake filled with berries and whipped cream. Perfect for dessert or a sweet treat! Preparation Time: 30 minutes
Serving Size: 8-10 servings
Ingredients:
*Base:*
- 4 eggs
- 1½ dl muscovado sugar (or brown sugar)
- 1 dl all-purpose flour
- ½ dl rye bran
- 2 tsp baking powder
*Filling:*
- 10-15 dl berries (e.g., blueberries or raspberries)
- 2 dl heavy cream
- 2 tbsp sugar (optional)
Instructions:
1. Preheat the oven to 200°C (392°F).
2. Whisk the eggs and muscovado sugar until fluffy.
3. In a separate bowl, mix the flour, rye bran, and baking powder.
4. Carefully fold the dry ingredients into the egg-sugar mixture.
5. Pour the batter into a baking tray lined with parchment paper and smooth the surface.
6. Bake in the oven for about 10-12 minutes, until golden brown on top.
7. Remove the base from the oven and gently turn it onto another piece of parchment paper.
8. Let it cool briefly, then peel off the parchment paper from the bottom.
9. For the filling, whip the heavy cream and add sugar if desired.
10. Spread the filling over the cooled base and scatter the berries on top.
11. Roll the base tightly into a log using the parchment paper for assistance.
12. Refrigerate the rolled cake before serving.
