A delicious rolled cake made with ostrich or chicken eggs, filled with cream, sour cream, and berries, perfect for a snack or dessert.
Preparation Time: 30 minutes
Serving Size: 8-10 slices

Ingredients:

- 2.4 dl ostrich eggs (or 5 chicken eggs)
- 2.4 dl sugar
- 1 dl potato flour
- 1 dl all-purpose flour
- 1 dl cream
- 2 dl sour cream
- 2-3 dl raspberries
- 2 dl blueberries
- 2-4 tbsp sugar (to taste)

Instructions:

1. In a bowl, combine the eggs and sugar, whisking until light and fluffy, about 10 minutes.
2. Gently fold in the potato flour and all-purpose flour into the egg mixture.
3. Spread the batter onto a baking sheet lined with parchment paper and bake at 200°C (392°F) for about 12 minutes.
4. While the cake is baking, prepare the filling by whipping the cream until stiff peaks form; then add the sour cream, berries, and sugar to taste.
5. Once the cake is slightly cooled, invert it onto a piece of wax paper and carefully remove the parchment paper.
6. Spread the filling over the cake and roll it up tightly.
7. Wrap the rolled cake in wax paper and let it chill in the refrigerator to set.
8. Slice and serve!
