A delicious and creamy cheesecake perfect for celebrations or indulging. Preparation Time: 30 minutes + 4 hours in the fridge
Serving Size: 8-10 servings
Ingredients:
- 200 g digestive biscuits
- 100 g butter
- 400 g cream cheese
- 200 g whipped cream
- 100 g sugar
- 1 tsp vanilla sugar
- 3 gelatine sheets
- 3 tbsp water
- 100 g berries (e.g., strawberries or blueberries) for decoration
Instructions:
1. Crush the digestive biscuits into fine crumbs and melt the butter. Mix the crumbs with the melted butter.
2. Press the biscuit mixture evenly into the bottom of a springform pan. Place in the fridge to set for about 30 minutes.
3. Soak the gelatine sheets in cold water for about 5 minutes. Heat the water in a saucepan and dissolve the gelatine in it.
4. In a bowl, mix the cream cheese, sugar, and vanilla sugar. Add the melted gelatine and mix well.
5. Gently fold the whipped cream into the cream cheese mixture until smooth.
6. Pour the filling over the biscuit base and smooth the top. Refrigerate for at least 4 hours or overnight.
7. Decorate with berries before serving.
