A delightful holiday tart with a gingerbread crust and creamy filling, topped with delicious persimmon slices.
Preparation Time: 1 hour
Serving Size: 8-10 servings

Ingredients:

- Crust:
- 250 g gingerbread dough (homemade or store-bought)
- Filling:
- 200 g plain cream cheese
- 2 dl Greek yogurt
- 1 dl sugar
- 2 eggs
- 1 tbsp cornstarch
- 1 tsp vanilla sugar
- 1 tsp lemon juice
- Topping:
- 2 persimmons
- For Garnish:
- 1 gingerbread cookie

Instructions:

1. Grease a springform tart pan.
2. Roll out the gingerbread dough slightly larger than the pan and place it into the pan. Trim any excess edges.
3. Mix the filling ingredients together and pour over the crust in the pan.
4. Bake the tart on the lower rack of the oven at 175°C (350°F) for about 30 minutes.
5. Remove the tart briefly from the oven and add thinly sliced persimmons on top.
6. Continue baking for an additional 30 minutes.
7. Allow the tart to cool and remove it from the pan. Crumble a gingerbread cookie on top before serving.
