- 2 garlic cloves, crushed
- 2 carrots, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 potato, diced
- 1 liter vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried herbs (such as thyme or basil)
- Fresh herbs for garnish (such as parsley)
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and crushed garlic, sauté for about 3-4 minutes until soft.
3. Add the diced carrots, zucchini, bell pepper, and potato. Sauté the vegetables for about 5 minutes.
