Lemon Cheesecake

A deliciously creamy lemon cheesecake with a buttery biscuit base. Preparation Time: 20 minutes
Serving Size: 8 servings
Ingredients
- BASE:
- 3 dl crushed Marie biscuits
- ½ dl granulated sugar
- 100 g melted butter
- FILLING:
- 1 can (about 400g) cottage cheese
- 2 packages (about 400g) cream cheese
- 2 eggs
- 1 tsp vanilla sugar
- ½ dl granulated sugar
- Juice and zest of 1 lemon
Instructions
1. In a bowl, combine the crushed Marie biscuits, granulated sugar, and melted butter. Press the mixture evenly into the bottom of a springform pan.
2. Zest the lemon and then squeeze the juice into a separate bowl.
3. In another bowl, mix together all the filling ingredients until smooth.
4. Pour the filling over the biscuit base and smooth the surface.
5. Bake in a preheated oven at 175°C (350°F) for about 40-50 minutes, or until the filling is set.
6. Allow to cool at room temperature, then refrigerate for at least a few hours before serving.
7. Optionally, garnish with lemon zest before serving.
