A fresh and delicious cheese salad that's perfect as a side dish or a light meal.
Preparation Time: 15 minutes
Serving Size: 4 people

Ingredients:

- 200 g assorted cheeses (e.g. feta, cheddar, mozzarella)
- 1 cucumber
- 1 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- 200 g cherry tomatoes
- 100 g salad greens (e.g. iceberg lettuce or arugula)
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste

Instructions:

1. Peel and chop the cucumber, red onion, and bell peppers.
2. Cut the cheeses into cubes.
3. Halve the cherry tomatoes.
4. Combine all ingredients in a large bowl.
5. For the dressing, mix the olive oil and balsamic vinegar, seasoning with salt and pepper.
6. Pour the dressing over the salad and toss gently.
7. Serve immediately and enjoy!
