A delightful blend of feta and ricotta cheese, these beautiful cheese balls are a perfect addition to any tapas selection or spread on bread. They can be stored in seasoned olive oil in the fridge, making them easy to prepare in advance. Preparation Time: 30 minutes + marinating time
Serving Size: About 20 balls
Ingredients:
- 150 g feta cheese
- 150 g ricotta cheese
- 1 tablespoon sun-dried tomatoes, chopped
- Just under 1 tablespoon fresh dill, chopped
- A pinch of black pepper
- (A pinch of salt)
- About 2-3 dl olive oil
- A bit of dried or fresh oregano
- A pinch of chili flakes (to taste)
Instructions:
1. In a bowl, mix together the feta cheese, ricotta cheese, chopped sun-dried tomatoes, dill, black pepper, and salt using a fork until well combined.
2. Pour the olive oil into a clean jar. Add the spices (oregano and chili flakes) and mix well.
3. Roll small balls (about a teaspoon each) from the cheese mixture and place them into the jar with the olive oil.
4. Close the jar tightly and store it in the refrigerator. Allow the cheese balls to marinate for at least a few hours or overnight before serving.
