A delicious Finnish cheesecake with a sweet apple topping. Preparation Time: 1 hour 15 minutes
Serving Size: 8 servings
Ingredients:
- 200 g digestive biscuits
- 100 g butter
- 400 g cream cheese
- 200 g sugar
- 2 eggs
- 1 tsp vanilla sugar
- 2 dl cream
- 2-3 apples
- Cinnamon (to taste)
Instructions:
1. Crumble the digestive biscuits and melt the butter. Mix the biscuit crumbs with the melted butter.
2. Press the mixture firmly into the bottom of a pie dish.
3. In a bowl, beat the cream cheese and sugar together, then add the eggs one at a time, mixing well after each addition.
4. Stir in the vanilla sugar and cream until smooth.
5. Pour the cheese mixture over the biscuit base.
6. Peel and slice the apples. Arrange the apple slices on top of the cheesecake and sprinkle with cinnamon.
7. Bake at 175°C (350°F) for about 45-50 minutes, or until the filling is set.
8. Allow to cool, then refrigerate for at least a few hours before serving.
