A delicious dish combining juicy chicken with a Cosmopolitan-style filling, served with black salsify-enhanced mashed potatoes, sautéed tomatoes, and a quick cider sauce. Preparation Time: 45 minutes

Ingredients:
- 4 chicken fillets
- 100 g cream cheese (plain or herb-flavored)
- 2 tbsp lemon juice
- 1 dl vodka
- 1 dl cranberry juice
- 1 dl lime juice
- 4-5 black salsify roots
- 600 g potatoes
- 2 tbsp butter
- 1 dl milk
- 4 ripe tomatoes
- Salt and pepper to taste
- 1 dl cider
- 1 tbsp honey
- 1 tbsp olive oil
Instructions:
1. Preheat the oven to 200 °C (390 °F).
2. Prepare the filling: In a bowl, mix cream cheese, lemon juice, vodka, cranberry juice, and lime juice. Season with salt and pepper.
3. Place chicken fillets on a cutting board and pound them thin. Spread the filling over the fillets and roll them tightly.
4. Secure the rolls with toothpicks and place them in a baking dish. Bake in the oven for about 20-25 minutes.
5. Peel and chop the potatoes. Boil in salted water until soft. Drain and mash with butter and milk. Season with salt.
6. Peel and slice the black salsify into thin pieces. Sauté in oil until golden brown.
7. Cut the tomatoes in half and sauté them in a pan until soft and slightly colored.
8. Prepare the cider sauce: Heat cider and honey in a saucepan. Let it simmer for about 5 minutes until slightly thickened.
9. Serve the chicken rolls with mashed potatoes, sautéed tomatoes, and black salsify. Drizzle the cider sauce over the servings.
