A refreshing and vibrant salad packed with nutrients, perfect for a light meal or side dish. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 1 large avocado- 1 can black beans
- 1 red bell pepper
- 1 cucumber
- 1 small red onion
- 100 g corn
- 150 g cherry tomatoes
- 100 g feta cheese
- 1 lime
- Fresh cilantro
- Salt and pepper
- Olive oil
Instructions:
1. Rinse the black beans under cold water and drain well.2. Peel and dice the avocado, red onion, cucumber, and bell pepper into small cubes.
3. Halve the cherry tomatoes and add them to the salad mix.
4. Combine all ingredients in a large bowl.
5. Add the corn and crumbled feta cheese to the bowl.
6. Squeeze lime juice over the salad and drizzle with olive oil to taste.
7. Season with salt and pepper, and mix well.
8. Garnish with chopped fresh cilantro before serving.
9. Serve immediately and enjoy!
