Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g. spaghetti or fusilli)
- 200 g fresh spinach
- 200 ml heavy cream
- 100 ml grated Parmesan cheese
- 2 garlic cloves
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a bit of the cooking water.
2. Heat olive oil in a pan over medium heat. Add minced garlic and sauté until golden.
3. Add fresh spinach to the pan and cook until wilted.
4. Pour in the heavy cream and stir well. Allow the sauce to simmer on low heat for about 5 minutes.
5. Add grated Parmesan cheese to the sauce and mix until melted. Season with salt and pepper.
6. Add the cooked pasta to the sauce and mix well. If the sauce is too thick, you can add a little reserved pasta water.
7. Serve immediately and enjoy!
