A refreshing salad featuring crunchy fennel, creamy cheese, and roasted nuts, perfect as a light meal or side dish. Preparation Time: 20 minutes

Ingredients:
- 1 bulb fennel
- 150 g cheese (such as feta or goat cheese)
- 100 g almonds
- 100 g nuts (such as walnuts or pecans)
- 2 tablespoons honey
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (such as parsley or basil) for garnish
Instructions:
1. Peel and slice the fennel into thin strips.
2. Crumble the cheese into small pieces.
3. Toast the almonds and nuts in a dry skillet over medium heat until golden brown. Add the honey to the pan and stir well to coat the nuts and almonds. Allow to cool.
4. In a bowl, combine the fennel, cheese, and the toasted nuts and almonds.
5. Prepare the dressing by mixing the olive oil, salt, and pepper. Pour the dressing over the salad and toss gently to combine.
6. Garnish with fresh herbs before serving.
