Serving Size: 4-6 servings
Ingredients:
- 5 potatoes
- 3 medium carrots
- 1 small onion
- A piece of turnip or a small rutabaga
- A piece of celery root or 2 stalks of celery
- 1 liter vegetable broth (or water)
- 2 tablespoons oil
- Salt and pepper to taste
- Fresh herbs (e.g., thyme or parsley) for garnish
Instructions:
1. Peel and chop the potatoes, carrots, onion, turnip, celery root, and celery.
2. Heat the oil in a large pot over medium heat. Add the onion and sauté until soft.
3. Add all the chopped vegetables to the pot and stir. Sauté for a few minutes.
4. Pour the vegetable broth (or water) into the pot and bring to a boil.
5. Reduce the heat and let it simmer for about 30-40 minutes until the vegetables are tender.
6. Season with salt and pepper. Add fresh herbs before serving.
