Nettle Gremolata with Parmesan Potatoes

Ingredients:
- 500 g potatoes - 50 g Parmesan cheese
- 2 tbsp olive oil
- 1 dl fresh nettles
- 1 dl parsley
- 1 garlic clove
- Juice of 1 lemon
- Salt and pepper to taste
Instructions:
1. Peel and boil the potatoes in salted water until just tender. Drain and let cool slightly. 2. Slice the potatoes thinly and place them in a bowl. Add olive oil, salt, and pepper, and mix well.
3. Grate the Parmesan cheese over the potatoes and gently toss to coat.
4. Grill the potatoes over medium heat until golden brown and crispy, about 10-15 minutes.
5. Prepare the nettle gremolata: Rinse the nettles and parsley, then chop finely. Crush the garlic and mix all ingredients in a bowl with lemon juice. Season with salt and pepper.
6. Serve the crispy Parmesan potatoes with nettle gremolata as a side dish to grilled meat or fish. Enjoy!
