A delicious way to utilize carrot peels, inspired by Juha Kylä-Kaila's journey to becoming a brewer. Preparation time is approximately 45 minutes, serving size is 4.
Ingredients:
- 200 g carrot peels
- 1 dl oats
- 2 dl water
- 1 tbsp honey
- 1 tsp salt
- 1 tsp cinnamon
- 1 dl nuts (e.g., walnuts or almonds)
- 1 dl raisins
Instructions:
1. Rinse the carrot peels thoroughly and chop them into small pieces.
2. Boil the carrot peels in water for about 10 minutes until they soften.
3. Drain the carrot peels and place them in a bowl.
4. Add oats, honey, salt, and cinnamon to the carrot peels. Mix well.
5. Stir in the nuts and raisins into the mixture.
6. Shape the mixture into small balls and place them on a baking sheet lined with parchment paper.
7. Bake in a preheated oven at 180°C (350°F) for about 25 minutes or until the balls are golden brown.
8. Let cool before serving.
