Serving Size: 4-6 servings
Ingredients:
- 1 cup sugar
- 1/2 cup water
- 1 3/4 cups milk
- 3/4 cup heavy cream
- 4 egg yolks
- 1 whole egg
- 1 teaspoon vanilla sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Instructions:
1. Prepare the caramel: In a saucepan, combine sugar and water. Heat over medium until the sugar dissolves and turns golden brown. Quickly pour the caramel into ramekins before it hardens.
2. Make the custard: Heat the milk and cream in a saucepan. Do not bring to a boil.
3. In a bowl, whisk together the egg yolks, whole egg, vanilla sugar, cinnamon, and nutmeg.
4. Gradually pour the hot milk mixture into the egg mixture while stirring to prevent the eggs from cooking too much.
5. Strain the mixture into the ramekins over the caramel.
6. Place the ramekins on a baking sheet and pour boiling water into the sheet until it reaches halfway up the sides of the ramekins.
7. Bake at 320°F (160°C) for about 40-50 minutes, until the custard is set.
8. Allow to cool at room temperature, then transfer to the refrigerator for at least a couple of hours or overnight.
9. Unmold the crème caramel onto a serving plate before serving.
