Ingredients:

- 500 g game meat (e.g., venison)
- 2 tbsp oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 3 carrots, sliced
- 2 potatoes, diced
- 1 red bell pepper, diced
- 400 g crushed tomatoes
- 2 dl beef broth
- 2 bay leaves
- 1 tsp thyme
- 1 tsp salt
- ½ tsp black pepper
- 1 dl red wine (optional)
- Fresh parsley, for garnish

Instructions:

1. Heat the oil in a large pot over medium heat. Add the game meat and brown it on all sides.
2. Add the chopped onion and minced garlic, and sauté until they are soft.
3. Add the carrots, potatoes, and bell pepper. Cook for about 5 minutes.
4. Pour in the crushed tomatoes and beef broth. Add the bay leaves, thyme, salt, and pepper. Stir well.
5. Bring the stew to a boil, then reduce the heat and cover. Let it simmer gently for about 1.5 hours, until the meat is tender.
6. Serve the wild game stew garnished with fresh parsley.
