Ingredients:
- 2 tbsp olive oil - 1 onion, chopped
- 2 cloves garlic, crushed
- 2 carrots, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 200 g green beans, chopped
- 1 can (400 g) crushed tomatoes
- 1 cup vegetable broth
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp sugar
- Fresh parsley for garnish
Instructions:
1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft. 2. Add the crushed garlic and cook for another minute.
3. Stir in the carrots, bell pepper, and zucchini. Sauté for about 5-7 minutes until the vegetables begin to soften.
4. Add the green beans, crushed tomatoes, and vegetable broth. Mix well.
5. Season with oregano, salt, black pepper, and sugar. Stir and let the stew simmer on low heat for about 30-40 minutes.
6. Check for seasoning and add more salt or spices if needed.
7. Serve garnished with fresh parsley.
