A delicious vegan vegetable loaf made from chickpeas, complemented by a goat cheese topping. Perfect for holiday gatherings or any special occasion.

Serving Size: 4-6 servings

Ingredients:

- 400 g cooked chickpeas
- 1 dl rolled oats
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tsp dried oregano
- 1 tsp paprika powder
- Salt and pepper to taste
- 100 g goat cheese (optional, not vegan)
- Fresh parsley for garnish

Instructions:

1. Preheat the oven to 180°C (350°F).
2. Mash the chickpeas in a bowl until mostly smooth.
3. Add the rolled oats, onion, garlic, bell pepper, olive oil, soy sauce, oregano, paprika powder, salt, and pepper. Mix until well combined to form a dough.
4. Shape the mixture into a loaf and place it on a baking sheet lined with parchment paper.
5. Bake the loaf in the oven for about 30-40 minutes, until the top is beautifully golden brown.
6. If using goat cheese, crumble it over the loaf during the last 10 minutes of baking.
7. Allow the loaf to cool slightly before serving. Garnish with fresh parsley before serving.
