Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 3 carrots, diced
- 2 potatoes, diced
- 1 liter vegetable broth
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 100 g creamy cheese (e.g., cream cheese)
- Fresh parsley for garnish
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and crushed garlic, sauté until soft.
2. Add the diced carrots and potatoes. Cook for a few more minutes.
3. Pour in the vegetable broth and add thyme, salt, and black pepper. Bring to a boil, then reduce the heat. Let the soup simmer for about 20 minutes, until the vegetables are tender.
4. Remove the pot from heat and add the creamy cheese. Stir well until the cheese has melted and the soup is creamy.
5. Serve hot, garnished with fresh parsley.
