Serving Size: 4 servings
Ingredients:
- 250 g pasta (e.g., penne or fusilli)- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- 1 tsp dried oregano
- Salt and pepper to taste
- 50 g Parmesan cheese, grated (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and set aside.2. Heat the olive oil in a large skillet over medium heat.
3. Add the chopped onion and minced garlic, sauté for about 3-4 minutes until soft.
4. Add the bell pepper and zucchini, sauté for another 5-7 minutes until the vegetables are tender.
5. Stir in the cherry tomatoes and spinach, and cook for a few more minutes until the spinach is wilted.
6. Season the vegetable mixture with oregano, salt, and pepper.
7. Add the cooked pasta to the skillet and mix well to combine all ingredients.
8. Serve immediately with grated Parmesan cheese, if desired.
