A delicious ground meat pasta made quickly and easily with zucchini, ground meat, and fresh herbs. The lime adds freshness and flavor, making it a perfect weeknight dinner.

Ingredients:

- 1 medium zucchini
- Olive oil
- 300 g cooked ground pork
- 1 garlic clove, sliced
- 2 spring onions, sliced
- Zest and juice of 1 lime
- A handful of fresh mint and cilantro
- Salt
- Black pepper
- 300 g fusilli pasta

Instructions:

1. Cook the fusilli pasta according to package instructions, then drain.
2. Dice the zucchini and sauté in plenty of olive oil until golden.
3. Add the cooked ground meat, spring onions, and lime to the pan. Cook until the onions are soft.
4. Remove the pan from heat and stir in the chopped herbs. Season with salt and black pepper.
5. Mix the finished mixture with the cooked and drained pasta.
6. Serve with grated Grana Padano cheese.
