Ingredients:
- 1 cup jasmine rice
- 2 cups water
- 2 tablespoons coconut oil
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 red chili, finely chopped
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 cup green beans
- 1 cup carrots, thinly sliced
- 1 cup mushrooms, sliced
- Fresh cilantro for garnish
Instructions:
1. Rinse the jasmine rice in cold water until the water runs clear. Cook the rice in 2 cups of water, adding a pinch of salt when the water boils. Lower the heat, cover, and let it simmer for about 15 minutes, until the water is absorbed.
2. Heat the coconut oil in a pan over medium heat. Add the chopped onion and sauté until soft.
3. Add the crushed garlic and chopped chili. Sauté for another minute.
4. Add the green beans, carrots, and mushrooms. Cook for about 5-7 minutes until the vegetables are tender but still crisp.
5. Stir in the soy sauce, salt, and sugar. Mix well.
6. Serve the rice on a plate and top with the vegetable mixture. Garnish with fresh cilantro.
