Easy Chicken Pasta

A simple and delicious chicken pasta that comes together quickly for a weeknight dinner. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 400 g chicken breast fillets
- 2 tbsp olive oil
- 1 onion
- 2 garlic cloves
- 1 bell pepper
- 200 g cherry tomatoes
- 100 ml cream
- 100 g Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a bit of the cooking water.
2. Cut the chicken breast into small pieces and season with salt and pepper.
3. Heat olive oil in a skillet and add the chicken pieces. Cook until they are golden and cooked through.
4. Add chopped onion, garlic, and bell pepper to the skillet. Sauté until the vegetables are soft.
5. Add cherry tomatoes and cream. Let simmer on low heat for a few minutes.
6. Stir in the cooked pasta with the sauce. If needed, add a little reserved cooking water for the desired consistency.
7. Grate Parmesan cheese over the pasta and mix well.
8. Garnish with fresh basil and serve immediately.
