A delicious and hearty dish combining the flavors of potatoes, onions, and anchovy fillets. This recipe is a bit labor-intensive, but the end result is worth it. Preparation Time: 1 hour 10 minutes
Serving Size: 6-8
Ingredients:
- 750 g onions
- Butter and oil for frying
- 1.5 kg firm potatoes
- 1 can of Jansson's temptation fillets or anchovy fillets with brine
- 3 dl heavy cream
- (Chopped dill)
Instructions:
1. Peel and slice the onions. Fry the onions in a generous mixture of butter and oil over medium heat, stirring until they are soft and golden. The longer you fry, the better the flavor.
2. While the onions are cooking, peel and julienne the potatoes. You can use a knife or a food processor for a neater result.
3. Grease a baking dish. Layer the bottom with a layer of potato strips, followed by the fried onions, and top with the anchovy fillets (reserve the brine). Continue layering until the dish is full, leaving a final layer of potatoes on top.
4. Pour the heavy cream and brine over the dish. You can mix them first, but it's not necessary.
5. Bake in a 180°C (356°F) oven for about 50 minutes. Increase the temperature to 200°C (392°F) and bake for another 20 minutes, until the top layer of potatoes is beautifully colored.
6. Serve with a fresh salad, pickled cucumbers, and beets.
