A delicious dish that combines potatoes, onions, and a creamy flavor with a unique twist.
Preparation Time: 1 hour
Serving Size: 4-6

Ingredients:

- 800 g potatoes
- 2 large onions
- 3 dl heavy cream
- 2 dl fish stock
- 200 g herring (e.g., salted or smoked)
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried dill
- 1 dl breadcrumbs (optional)
- Fresh dill for garnish

Instructions:

1. Peel and slice the potatoes thinly. Chop the onions.
2. Heat the butter in a pan and sauté the onions until soft.
3. Grease a baking dish and layer the potato slices in the dish, adding the sautéed onions evenly.
4. Cut the herring into pieces and add it between the layers of potatoes and onions.
5. Pour the mixed cream and fish stock over the potatoes. Season with salt, black pepper, and dill.
6. If desired, sprinkle breadcrumbs on top before baking.
7. Bake in the oven at 200°C (392°F) for about 45 minutes or until the potatoes are tender and the top is golden brown.
8. Allow to rest for a moment before serving. Garnish with fresh dill.
