Ingredients:
- 200 g spelt crispbread
- 150 g soft tofu
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp soy sauce
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., parsley or basil) for garnish
Instructions:
1. Prepare the tofu mayonnaise: Blend the soft tofu, lemon juice, Dijon mustard, and soy sauce in a blender until smooth and creamy.
2. Add the olive oil and season with salt and pepper. Blend again until well combined.
3. Place the spelt crispbreads on a serving platter.
4. Spoon the tofu mayonnaise on top of each spelt crispbread.
