A hearty and nutritious lentil soup packed with vegetables.
Preparation Time: 40 minutes
Serving Size: 4 servings
Ingredients:
- 2 dl red lentils
- 1 onion
- 2 garlic cloves
- 2 carrots
- 1 potato
- 1 can crushed tomatoes
- 1 liter vegetable broth
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1/2 tsp chili powder (optional)
- Fresh parsley for garnish
Instructions:
1. Peel and chop the onion, garlic, carrots, and potato.
2. Heat olive oil in a pot and sauté the onion and garlic until soft.
3. Add the chopped carrots and potato to the pot and cook for a few minutes.
4. Stir in the red lentils, crushed tomatoes, vegetable broth, salt, pepper, thyme, and chili powder.
5. Bring the soup to a boil, then reduce the heat. Let it simmer for about 20-25 minutes until the lentils and vegetables are tender.
6. Taste and adjust the seasoning if needed.
7. Serve the soup warm, garnished with fresh parsley.
