Description: A delicious and crispy mushroom tostada made with leftover tortillas, perfect for a quick snack or appetizer.
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- Leftover tortillas
- 200 g mushrooms (e.g., button mushrooms or chanterelles)
- 1 onion
- 2 garlic cloves
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
- Grated cheese (optional)
Instructions:
1. Peel and chop the onion and garlic cloves.
2. Clean and slice the mushrooms.
3. Heat olive oil in a pan and add the onion and garlic. Sauté until soft.
4. Add the mushrooms to the pan and cook until golden brown. Season with salt and pepper.
5. Place the tortillas on a baking sheet. Optionally brush them lightly with olive oil.
6. Evenly distribute the mushroom mixture on top of the tortillas. Add grated cheese on top if desired.
7. Bake in the oven at 200°C (about 400°F) for 10-15 minutes, until the tortillas are crispy and the cheese has melted.
8. Remove from the oven and garnish with fresh parsley before serving.
9. Serve warm, perhaps with a dipping sauce on the side.
