Creamy Mushroom Soup

This delicious and hearty creamy mushroom soup is a perfect starter or a light main course. It's easy to make and ideal for chilly autumn days. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g mushrooms
- 1 onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl cream
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onion and garlic.
2. Clean the mushrooms and slice them.
3. Heat the butter in a pot over medium heat. Add the onion and garlic, and sauté for about 5 minutes until soft.
4. Add the sliced mushrooms and cook for another 5-7 minutes until the mushrooms are tender.
5. Pour in the vegetable broth and bring the soup to a boil. Let it simmer for about 10 minutes.
6. Blend the soup with an immersion blender until smooth.
7. Stir in the cream and season with salt and pepper. Heat the soup again but do not let it boil.
8. Serve hot, garnished with fresh parsley.
